Inspired by their culinary skills and his passion for artistic expression, he began cooking professionally at a Five Star resort in Park City, Utah. This experience launched his career as a talented chef and sparked his desire to elevate the dining experience beyond just the food on the plate.

One of his notable achievements was launching The Garden Cafe, a 250 seat formal dining restaurant in the Great America Hotel, a 750 room, five star hotel in Salt Lake City, Utah. As part of his role, Carl was responsible for recruiting and training the service staff and creating procedural manuals to ensure efficient restaurant operations. He successfully hired and trained the entire team at once, which helped to expedite the restaurant's opening. Due to his exceptional organizational skills and attention to detail, The Garden Cafe became a huge success and remains a popular dining destination for thousands of people worldwide.
